Breakfast Burrito

My go to breakfast burrito

  • Toaster Oven

Ingredients

  • 1 Large Burrito Flour Tortilla
  • 1/4 C Shredded Cheese Your preference
  • 1 tbsp Tapatio Hot Sauce Or your favorite
  • 2 Eggs
  • 1 tbsp Butter

Instructions

  • Add a line of hot sauce 1/3 of the way from the bottom across the tortilla. Sprinkle cheese on top and toast in the oven until the cheese is melted about 3 minutes. Do not crisp the tortilla.
    1 Large Burrito Flour Tortilla, 1 tbsp Tapatio Hot Sauce, 1/4 C Shredded Cheese
  • Melt the butter under high heat in a non stick pan. Add the eggs when the butter foams.
    1 tbsp Butter, 2 Eggs
  • Break the yolks and cook the eggs undistributed until they are set and firm. Flip the eggs to cook the other side.
  • Remove the tortilla from the oven and slide the eggs onto the lower left of the tortilla. Season to taste with sale and pepper. Fold the bottom of the tortilla up over the eggs. Fold the right side up and over the eggs. Roll up the tortilla and enjoy

Notes

Optional: Sauté minced peppers and or onions in the butter before adding the eggs.
